The two most popular types of cuisine in Louisiana are Creole and Cajun, and telling them apart is difficult for locals and tourists alike because you can often find both variations of the same dish—there is Creole gumbo and Cajun gumbo, and Creole jambalaya and Cajun jambalaya.
Creole is a fusion of European, African and Caribbean cooking techniques using Louisiana ingredients that rose to prevalence in New Orleans in the early 1800s.
Cajun is the cuisine of 18th Century French-Acadian exiles who settled in the swamps and prairies of southwest Louisiana. One insider tip to help you tell the difference is that tomatoes are fairly common in Creole and somewhat rare in Cajun.
The history of Baton Rouge plays an important role in its food culture and helps to understand where some of the classic dishes come from. Let’s take a look at some of the most famous local treats.
Gumbo
Gumbo (GUM-bo) is a hearty stew thickened with a browned roux (ROO), flour and oil mix, okra and filé (FEE-lay), ground sassafras leaves. It contains a wide variety of ingredients such as celery, peppers, okra, onions chicken, sausage and/or seafood. Generally it is served over rice or eaten as a stew itself.
Jambalaya
Jambalaya (jum-buh-LIE-uh) is a seasoned rice dish made with meat or seafood and is similar to Spanish paella. Traditional jambalaya consist of meat (pork, chicken, or even rabbit), seafood (shrimp, crab, crawfish), or both (often including andouille either way) and is cooked with vegetables, stock, rice, and various seasonings.
Étouffée
Étouffée (eh-too-FAY), which literally means smothered, is meat with butter sauce and chopped vegetables. This dish is found in both Cajun and Creole cuisine typically served with shellfish over rice.
Andouille
Andouille (AHN-do-ee) is a spicy sausage. Ever heard don’t ask how the sausage is made? well, too late. Generally it consists of pork butt, shank and fat, seasoned with salt, garlic and cracked black pepper. True andouille is smoked over pecan wood and sugar cane, giving the meat a sweet, dark flavor.
Boudin
Boudin (BOO-dan) is traditionally a blend of cooked pork, rice, onions, peppers and seasonings stuffed into a sausage casing, although boudin makers today sometimes get creative with unusual fillings like seafood.
Maque choux
Maque choux (MOCK-shoo) is a side dish with corn as the main ingredient. It contains corn, green bell pepper, onion, and sometimes garlic, celery, okra, and tomato. The ingredients are braised in a pot. Historically bacon grease was used for the braising stage, although various combinations of oil, butter, or cream may be substituted.
Po-boy
A po’ boy (also po-boy, po boy derived from the non-rhotic southern accents often heard in the region, or poor boy) is a sandwich originally from Louisiana. It traditionally consists of meat, which is usually roast beef, ham, or fried seafood such as shrimp, crawfish, fish, oysters, or crab.
Beignets
Beignets are a staple in New Orleans but are also prevalent in Baton Rouge. They are favored among visitors and locals alike. Essentially deep-fried pâte à choux — though it’s most often referred to as a hole-less, square donut

This is the place to go if you want fresh and high quality sandwiches, (hot rolls or cold rolls), soups, salads and more. Big Cheezy
BIG CHEEZY, a Baton Rouge staple since 2019, elevates comfort food with award-winning mac n cheese and gourmet grilled cheese sandwiches. Open for lunch, dinner, and late-night cravings. I recommend the Texas Cheesesteak ($11) and you can make it a combo for $3 and get seasoned fries or Mac and cheese on the side. They also have plenty of dips, you can get one of each! Rach, buffalo, BBQ, garlic aioli and honey mustard are all good options.

Schlitt’s & Giggles
A hometown food favorite, serving Baton Rouge for more than 16 years with classic New York style, thin crust pizza available by the slice or pie. The large 18 inch Quattro pizza runs you in at $19 but they range up to $25. It’s big enough to share making it well worth the price.

With its casual vibe, spacious seating, and TVs tuned to sports, Vars Pizza is the perfect place to grab a bite before a game or to relax with friends. The price point can be a little high but if you get a large to split, you can do a half and half to make it more worth the cost.

Pastime
The Pastime Restaurant started out as a grocery store on the Corner of South Blvd and a gravel road that later became Nicholson Drive, in the early 1920s. It operated as Alesce’s Grocery on the south side of downtown Baton Rouge in an area designated as Beauguard town. Surrounded by a rice mill, a brickyard, a lumberyard and a furrier, the Pastime eventually grew into a restaurant and lounge in 1945.
Due to the one-mile exclusion law from the LSU campus for any business selling alcohol, the Pastime, being one of the closest places to celebrate LSU sports, became a familiar and popular hangout for students, faculty and fans alike. As the times changed, the laws were lifted, but the tradition was started and remains today.
I do need to say that as food goes, I was not impressed. If you want a hole in the wall bar with locals to watch sports then this is still a good place for you. However, we thought the pizzas were WAY over priced for size and quality. They look like freezer pizzas and tasted about that quality level. Giving the benefit of the doubt we just should order something else but our first experience was a little disappointing.

“Imported” aka not Southern
Barracuda Taco Stand
This is your neighborhood margarita garden and taco “stand”. You order at the window, grab a number and your food is out in a flash. Seriously, we were shocked by how quick our food arrived. While the food was very tasty, I do feel like the portions are very small especially for the higher price point. All the tacos and quesadilla are served on mini tortillas for size reference.

Torchy’s Tacos at LSU
Buzzy chain serving Mexican street-food-style tacos in inventive varieties, including for breakfast. Originating in the bustling town of Austin, Texas, by a man named Mike Rypka. He bought a food trailer and a red Vespa. His dream? To start a taco joint. With countless tacos eaten, over 90 locations opened, and thousands of Taco Junkies added to the Torchy’s family, you can say it’s a hit with the locals on the LSU campus. We recommend their Queso no chips $5.85, kids steak quesadilla $4.35 , Peach house marg $7 for small $10 for large and the chicken Burrito $7.75.

Clutch City Cluckers is a counter serve joint (food truck) that specializes in Nashville Hot Chicken Sandwiches, Cheese Topped Hot Chicken Sandwiches, Chicken Tenders, Loaded Fries, and much more.
